If you are a true foodie, you crave quality ingredients and authentic cooking experiences. You enjoy creating your own dishes far more than tearing open packages or ordering off a menu. Why settle for anything less than the best when it comes to pizza? Only a wood fired pizza oven can give you the rich flavor and traditional cooking practices your culinary passion deserves.
Even if you don’t consider yourself a skilled at-home chef, you can add a wood fired pizza oven in your yard or garden and enjoy cooking a family favorite over an open flame. Plus, an outdoor pizza oven takes your entertaining capabilities to the next level. You can easily custom-create pizzas to suit everyone’s taste—whether cooking for a few people or a large party with many guests.
Karumba Point Sunset Caravan Park Pizza
Wood-burning ovens are ancient methods of food preparation. Culinary experts state that there are many benefits to cooking pizzas, and other food, in a wood-burning oven.
If you want the best-quality pizza oven for your backyard, you should turn to Mason-Lite. Our team has over a century of combined experience in fireplaces and can help you understand how a masonry fireplace or Pizza Oven fits in to your outdoor landscape.
Have you experienced the delight of cooking your pizza in a wood-fired oven? If so, we would love to hear from you:
How has cooking pizza over an open flame changed your perception of this classic dish?
What cooking tips do you have for anyone new to cooking pizza in an outdoor over?
Pizza has become a favorite convenience food for busy individuals and families. Many people stop by their local pizza shop to pick up their favorite pie on a regular basis. Countless others rely on pre-made frozen pizzas or compile their own using components, such as packaged crusts and canned sauces.
No matter how you put together a pizza, there are limitations to how quickly your home oven can cook it. While a pizza shop can heat their ovens to 700 to 800 degrees Fahrenheit, most conventional home ovens max out at around 500 degrees. At that heat, it takes between 20 and 30 minutes to preheat the oven, plus eight to 15 minutes to bake a pizza.
With a wood fired pizza oven, you can attain higher temperatures—approximately 500 to 700 degrees. This sharply cuts pizza cooking time. As a result, you can expect your pizza to cook in just two to five minutes in a wood-fired oven (depending on the dough thickness).
If you have ever experienced pizza cooked in a wood fired oven, you’ve undoubtedly noticed a significant taste difference. In part, the enhanced flavor that wood-fired cooking offers is due to even heat distribution. In addition, cooking pizza wood imparts a unique, smoky flavor that is impossible to replicate with a traditional home oven.
Many health-conscious individuals top pizzas with tasty fruits and veggies. Cooking over an open flame in a wood-fired oven cooks vegetables and fruits very quickly and helps them retain specific nutrients and antioxidants. A longer cooking process can cause depletion of these antioxidants and nutrients and diminish the pizza’s nutritional value.
HINT: Add cornmeal on your pizza peel before adding the pizza to help the pizza slide into the oven easier.
While modern-day Australians often seek an outdoor oven for pizza, these versatile fireplaces can cook many other types of food as well. If you think about it, the bulk of cooking throughout human history has been done in a wood-fired oven. Many contemporary ovens can bake bread, roast meats and vegetables, and much more.
Anyone who wants to maintain a green lifestyle is always on the lookout for ways to trim their energy consumption. In those cases, a wood-fired oven is a great option. A wood oven does not require any electricity or gas to operate. The only energy source is heat from the fire.
However, cooking over an open flame does produce smoke. In some areas of the country, municipalities have instituted restrictions of wood burning to help reduce air pollution. Before investing in a wood-burning fireplace, you should check on wood-burning regulations in your local community and understand any relevant restrictions.
To the uninitiated, cooking pizza over a wood-burning oven may sound complicated, but it is truly very simple. In fact, you can follow the same steps you would use to make a pizza from scratch in your conventional condition. Select or make dough, top with sauce, cheese, desired accompaniments and bake. The only step that is truly different is that you make a delightful fire instead of flipping on a switch.
Wood-fired pizza is a true culinary delight that takes an all-time favorite to new heights of flavor. You also gain nutritional benefits from the wood-fired cooking process, but do not lose the convenience of this easy-to-cook staple.
If you would like to add a wood fired pizza oven to your outdoor landscape, you should seek out the best of the best. At Mason-Lite, our team of masonry experts can help you select an easy-to-install pizza oven to help your outdoor cooking dreams come true.

The Gulf area is home to numerous and diverse species of birds including migratory species – parrots, finches, honeyeater, herons, birds of prey, brolgas and much much more. Karumba being located on the coastline with savannah grassland, meandering wetlands stretching up to 30km inland, savannah scrub and coastal mangrove environments is a virtual birdwatchers paradise.
The Gulf Savannah extends from the Great Dividing Range in the east, to the Northern Territory border in the west – covering around 186,000 sq kilometers. There are vast flat plains around the southern Gulf area stretching to the south. To the east and southwest of the region there are rising uplands. Savannah grasses, shrubs and trees along with a rich variety of wildlife provides a landscape which really is – amazing!
The southwest area of the Gulf region is heavily mineralized and is part of the north west mineral province. The Gulf’s land area can be compared to being approximately 80% the size of Victoria. There is an annual water run-off equivalent to almost 30% the national total – this is larger then the Murray Darling basin!
The Gulf Savannah features a tropical climate – wet season in the summer and dry season through the winter. The temperatures range from a daily average maximum of 33°c and minimum of 20°c, with an approximate rainfall of 900 mm per annum.
There are two bio-regions in the Gulf:
The Northern Gulf – Resource Management Group – NRM and
The Southern Gulf – Catchments – NRM
The role of these groups is to produce strategies for the management and protection of the bio-regions. Supporting this process at the catchment level, are catchment co-ordination and Landcare groups.
There are 20 wetlands in the Gulf region and the Gulf is drained by 28 drainage basins, with the majority of streams flowing north and northwest into the Gulf of Carpentaria. These river basins include the Mitchell, Flinders, Gilbert, Leichhardt, Nicholson, Norman and Staaten.
Following are various photos provided from Karumba locals – Rose & Jockey Bouwens.

Phil Horton from catching the big Spanish Mackerels Fish
This spawning behavior is quite common and sees big runs of Spanish mackerel in the far northern part of Queensland around the summer months. At the other end of the state, the story is quite similar with the more predominant runs usually taking place around the southeast corner between January and May. The central and northern areas of Queensland usually see their bigger inshore aggregations anywhere between the winter and spring months of July and November. There is not much known on how far these fish move or whether they do travel up and down the coast, however, it is known that female fish mature much quicker than males and can reach the legal 75cm mark in just two years. This is one of the reasons why Spanish mackerel is second behind coral trout in terms of commercial fisheries as they grow so quickly and are so abundant.
Wherever you target these fish, the first step to snaring a big Spanish mackerel is to find out when these fish are most predominant in your local area. Once you know when they are ‘in season’ your chances increase dramatically, as well as the number of fish per angler.

Queensland Boating and Fisheries Patrol district expert reminded fishers to check the size and possession limits that apply to the iconic Queensland species when the season opens. “It’s important that fishers refresh their knowledge of the rules and regulations before dropping a line to avoid being fined,” Expert said. “The minimum size limit for barramundi on the east coast and Gulf of Carpentaria is 58cm, the maximum size limit is 120cm and the possession limit is five fish per person. For those fishing in some of Queensland’s stocked freshwaters, one barramundi may be taken if it is greater than 120cm.”
Barramundi Season Opening 2019
For the full list of these stocked freshwater locations, visit https://www.daf.qld.gov.au/fisheries/recreational/rules-regulations/closed-seasons-fresh-waters
Closed seasons have been in place for barramundi since October 7, 2018 in the Gulf of Carpentaria and on the east coast since November 1. Expert said annual closures apply to barramundi fishing to ensure the long-term sustainability of the fish species. “The closed seasons which coincide with spawning periods protect barramundi stocks during this vulnerable time in their life cycle. This allows the fish to spawn and replenish to ensure healthy fish stocks for current and future generations of Queenslanders.”
If you suspect illegal fishing, whether seen in person or online, report it to the Fishwatch hotline on 1800 017 116. Don’t engage with the person, as this can compromise an investigation.
For more information on Queensland’s fishing closed seasons, visit www.fisheries.qld.gov.au, call 13 25 23 or download the free ‘Qld Fishing’ app from Apple and Google app stores. You can follow Fisheries Queensland on Facebook, Twitter and Instagram (@FisheriesQld).

There are so many options when it comes to fishing at Karumba that sometimes it’s hard to know where to begin! A good spot for starters is the Norman River, where you’ll find huge fish like.
The Barramundi is widely regarded as Australia’s premier native sport fish and the Gulf Country in Tropical North Queensland offers excellent opportunities to target this much sought after species.
Rod and Kim. 2 nice people with 4 very nice Barra. Caught today in Karumba 26 th April 2017. Well done guys.
Regarded as a true sporting fish with great fighting ability, the bite is sudden and savage and once hooked barramundi perform aerobatics and repeated powerful runs for cover in snags. The Australian record catch for a Barra is 37.85kg. Size and bag limits do apply.

Here in Tropical North Queensland we have two species, the blue salmon and the threadfin or king salmon as it is called in Queens land. Our species are great sport on light tackle and readily take lures or flies when fishing for Barramundi. Its firm white flesh is arguably better eating than barramundi, easy to fillet and freezes quite well. Average captures vary from 50cm to just under 1 M., and size and bag limits do apply.
Barra-Dave-scores-a-55-cm-Grunter-Bream-in-the-Norman-river-while-staying-at-the-Sunset-Caravan-Park-on-there-annual-holidays
Grunter (javelin fish) are probably the most prolific fish in our estuary and tidal systems and many a bait fishing outing has been saved by the catching of dozens of these common, but very underrated fish. They are one of the best eating fish to come from our waters, but being so easy to catch, do not have the glamour nor appeal of the more famous species like Mangrove Jacks or Barramundi. Size and bag limits do apply to grunter. Soft white flesh and excellent eating.
The finger mark bream (spotted scale sea perch – big scale red) derives its name from the distinctive “thumb print” like black spot found near its tail when just landed. This spot will fade as the fish dies as will its magnificent copper colouring. It is a splendid fish, highly prized for its eating qualities ( arguably the best eating fish to come from the estuaries) and offers a dogged hard fight to the boat. Finger mark show exceptionally slow growth rates, take only what you need for a good feed as fish stocks can easily be put under pressure from over fishing. Size and bag limits do apply.
Also commonly called black king fish, cobia are usually caught while targeting other species. Taking both trolled lures or garfish meant for mackerel and hooked by bait fisherman working the bottom, they offer a very hard exhausting fight. Fish to 30+ lb inhabit the tropical reef waters and are usually found near structures. Their habit of accompanying large mantas and devil rays is well known and many an alert angler will entice a strike by casting a lure at these gliding monsters. They are excellent eating.
Narrow-Barred Mackerel or Tanguigue (more commonly called Spanish Mackerel or just Spaniards) are the prime target in our waters with specimens to over 60 lb (27 kg) common. They will readily take jigged chrome slices, trolled or floated garfish and pilchard baits as well as trolled lures. Sport fishing tackle of at least 6 kg is preferred with the use of a heavy wire leader and black swivels essential for both lure and bait fishing. Once hooked Spaniards will make one long spirited run and usually tire shortly after, smaller shorter runs precede gaffing at the boat.
Len and Judi Sure Know How To Get The Big Spanish Mackerel Great Catch Guys Karumba Point Sunset Caravan Park
Spaniards are excellent eating but must be killed by a sharp blow to the head and bled immediately upon capture. This will not only preserve the flesh but make them much easier/ safer to handle, most anglers will carry a heavy wooden “donger”, similar to a small baseball bat, on board for this purpose. The fish can either be cut up into steaks or filleted and skinned, either way the flesh is excellent eating. Size and bag limits do apply.
Jewies are a cousin of the southern mulloway and look fairly identical apart from their scales which are much darker and have a black spot, hence the name. Their preferred habitat is around deep structure, wrecks and inshore reefs.
Excellent eating, hard fighting and available in XLS sizes makes this fish a prime target but apart from a few well known spots their numbers and consistency of capture are not prolific. Size and bag limits apply.

In Queensland, for many fish species there are limits on the size of fish that can be legally taken. There are minimum size limits and also some maximum size limits.
Size limits are typically based on biological research into each species’ reproductive cycles. Minimum size limits generally allow fish to spawn at least once and contribute to the population before they are taken.
However, some species spawn as they become larger which means a maximum size limit applies. For example, most barramundi begin their lives as males and later, as they grow larger, become females. A maximum size limit is applied to protect large females and to allow them to spawn.
A take and possession limit is the number of fish that one person can legally take and keep.
These limits serve several purposes. They conserve heavily exploited species, conserve species that are susceptible to capture, share the catch more equally among anglers, reduce the illegal marketing of fish and convey the message of ethical and responsible behavior.
Closed seasons prevent people from fishing at certain times of the year and protect species at particularly vulnerable times of their lifecycle such as spawning seasons.
No license is required for recreational fishing in Queensland tidal waters.
The Dept. of Primary Industry have a good online guide to what is and what is not allowed when fishing in the Local Area.
